Sancerre goes perfectly with fresh water fish, such as pike, salmon or scallops in a puffed pastry, smoked salmon, smoked trout, lobster, frogs legs, seafood mousse as well as with smooth goat cheeses such as Chavignol ou Saint-Maure.
